Custard


Ingredients:
350 ml of milk
Sugar 150 gr
Yolks 3 pcs
40 gr cornstarch
5 ml vanilla extract

Procedure:

Puff Pastry

Ingredients:
180 ml water
Flour 300 gr
Salt 6 g

Cold margarine or butter 250 gr

Preparation:

Corn patties

ingredients:
1 cup corn oil

ingredients:

250 gr butter
435 gr of caster sugar
325 gr Egg
435 gr flour
8 gr baking powder
115 ml of milk
30 gr of cocoa

ingredients:

Ganache:

300 gr chocolate topping

Mirror:
Ganache 100g
75gr red dye
15g glucose


Preparation:

Butter Cream:
Place in a pot with sugar water, and bring to a boil until a syrup of 118 ° C. Pour in the form of thread over the egg whites. Beat until an Italian meringue. Add butter slowly ointment point while continuing whisking. Finally add the coffee extract. Book.

Chocolate cake:

ingredients:

4 eggs
375 gr. purpose flour

French toast


ingredients:
  1 pack of white bread

  2 tablespoons ground cinnamon

Preparation:

chocolate cake



ingredients:

195gr of flour
200g cocoa powder 
25gr sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
75g melted unsalted butter (if salted, no salt put above)
Warm water 240ml
1 tablespoon lemon juice or vinegar
1 teaspoon vanilla extract

Chocolate Icing:

170gr of black couverture
180ml whipping cream (35% fat)
1 tablespoon butter at room temperature (15g)

Manually installing 1 stick or spoon.

preparation:

Preheat oven to 180 º C

Grease the mold. If we want to unmold cover with greased baking paper and grease it again. 

Mix the solid ingredients.
put in a large bowl the flour, sugar, cocoa, baking powder, baking soda and baking powder
Mix well with the balloon until the mixture is smooth and all the same color.

In a tall glass put the water and heat 50 seconds in the microwave. Add and mix the lemon juice or vinegar and vanilla. Stir well.
